Salmon and Broccoli Pasta

Ingredients:

  • Coconut oil
  • Olives
  • salt
  • 1 fresh skinless salmon fillet
  • 50g low-fat cheese of your choice, finely grated
  • 200g zucchini pasta

Method:

Preheat the oven to 180 degrees Celsius. For this recipe, you will need an ovenproof dish (measuring 15 by 20cm, and about 5cm deep). Meanwhile, put a large pot of water on to boil for the pasta. When it is boiling rapidly, add a generous sprinkle of salt followed by your pasta. Stir it and allow to cook for 8-10 minutes.

Once the pasta is done, remove it from the heat, add in the olives and season well.

Halve the salmon fillets then place the pieces in a single layer on the base of the ovenproof dish.

Bake for 20 minutes until the salmon is slightly brown. Remove from the oven, cut into slices or pieces and place it on top of the pasta then sprinkle cheese.

This meal provides a good balance of protein from the salmon, zucchini contains more grams of fiber per serving than regular pasta, which helps your digestive function and aids in weight loss, and vitamins from the olives, making it a great option for supporting weight loss.
