Lunch Salad Options

Option 1

Handful Baby spinach
100g Chopped purple cabbage
1 Grated baby marrow
120g shredded chicken
1/2 cup black beans

Dressing: 20ml soy sauce, 5ml honey, 10ml rice vinegar, 5ml sesame oil (shake it up)

Garnish with coriander

Option 2

Handful Rocket leaves
100g snap peas chopped
Fine cucumber
120g smoked salmon
60 g Fat free cottage cheese

Dressing: Squeeze fresh lemon juice, add black pepper and tabasco or fresh chilli

Garnish with dill

Option 3

Chopped herb lettuce
100g cooked beetroot
Shredded green beans
120g grilled steak

Reduced fat balsamic dressing

Garnish with Micro greens

Option 4

Shredded cabbage (purple and white)
One grated carrot
Half cup crushed pineapple
120g lean chopped bacon or pork fillet strips

Add black pepper or chill if desired

Garnish with parsley
