Low Cal Roast Meat with Cauliflower Mash

Ingredients:

  • 1 cup baby spinach
  • ½ cup shredded roast meat
  • ⅛ teaspoon salt
  • ⅛ teaspoon ground pepper
  • 1 cup cauliflower
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon grated lemon zest
  • 2 tsp Extra live oil
  • 1 tablespoon breadcrumbs, toasted.

Method:

  1. Cook roast meat in an air fryer for 10 min. Add spinach on the side; cook for 1 more minute. Season with salt and pepper; remove from heat. Cook cauliflower on another pot for 3 min. Mash the cauliflower cooked and add salt and pepper. Mix the roast meat with the spinach and add on top of the mashed cauliflower. Add salt, lemon juice, and pepper to the extra olive oil; toss to combine. Pour on top with a spoon.
