Ingredients:
- 2 slice whole wheat bread
- 1 ½ tbsp low-fat cottage cheese
- 1 tsp olive oil
- 3 handfuls sliced, small mushrooms
- 2 tbsp skimmed milk
- 1 tbsp snipped chives
- 1 chicken breast, diced
Method:
Heat the olive oil in a non-stick pan and cook the chicken breast until crispy and brown. At this stage add the mushrooms remembering to stir frequently, until softened. Spoon in the milk and the remaining cottage cheese and stir well until coated.
While this cooks, toast the bread and place on the side to cool. Once the toast has cooled spread half of the cottage cheese on the toast. Once done spread the cooked chicken evenly on one side of the bread, place the second slice on top and serve.
